Excess dietary salt intake is a well-known risk factor for the development of hypertension, cardiovascular disease and renal disease and one of major public health concerns in Korea. Dietary salt intake can be affected by individual salty taste perception. Zinc has been reported to be associated with taste perception. Zinc is required for the enzymatic function of gustin (carbonic anhydrase VI), a zinc metalloprotein in parotid saliva. Zinc deficiency leads to the decrese of salivary gustin secretion, which is related to a reduced or distorted taste function. The zinc intake has been insufficient in Korean population and zinc deficiency has been reported in obese individuals. In addition, genetic polymorphism of
