I once asked Mr Gu Why do you stick to using a bread starter to make bread even though it takes longer than using instant yeast He answered If I chose the instant yeast instead I could make bread much faster But I believe the bread turns out much better when I ferment the dough slowly Time makes all the difference In a similar way only well fermented people can reach their full potential That is my philosophy about bread and life
At that time I didn t understand Mr Gu s philosophy But now it makes more sense to me I might be undergoing a fermentation process of my own I mean maybe I am like the dough that is slowly rising I just need time to develop myself before I go out into the world I believe I ll rise like the bread that Mr Gu makes―fully but at a slow pace and I ll be all the better for it
