□ 수정과 Sujeonggwa
- Ingredients: cinnamon sticks 50g(5 stick), ginger 50g, water 1.5L, jujube 5, dark brown sugar 1C
1. Cleanse the outside of the cinnamon stick and the jujube.
2. Cut the two pieces of jujube by turning the shell and make a garnish.
3. Remove the skin from the ginger and cut it.
4. Put 1.5 litres of water in each pot, put only ginger in one and jujube in the other, excluding cinnamon sticks and the garnish.
5. When the water boils, lower the heat to medium and simmer for another 30 minutes.
6. Filter ginger and cinnamon water, mix it together.
7. Add brown sugar. Heat it a little so the brown sugar can melt well.
8. Season it to fit your taste!
9. When the sugar is all melted, put everything into the refrigerator and cool it down.
□ 약식 Sweet Rice with Nuts and Jujube
- Ingredients: glutinous rice 3C, Jujube 12, chestnut 12, ginkgo nuts 10, pine nut 30g, raisin 30g, cinnamon powder 1t, dark brown sugar 2/3C, soy sauce 3T, jujube water 2C, sesame oil 2T
1. Wash 3C of glutinous rice clean and soak in water for more than 1 hour.
2. Remove seeds and cut jujube into 3 even pieces or bite-sized pieces.
3. Clean the nuts and cut them into bite-sized pieces.
4. Peel off the ginkgo nuts, remove the skin and have them prepared.
5. Boil the remaining jujube seeds in water for 15 minutes to make jujube water.
6. Add 3T of soy sauce, 2/3C of brown sugar, and 1t of cinnamon powder to make the seasoning.
7. Put the rice into a rice cooker and put the ingredients except pine nuts on top of it.
8. Add the seasoning and start cooking(Use the white rice button for electric rice cookers)
9. Add 2T of sesame oil and pine nuts and mix it well.
10. Apply sesame oil to a bowl and let everything cool down.
11. Take out the food, cut it into bite-sized pieces and put them in a bowl.
□ 송편 Songpyeon
- Ingredients: non glutinous rice powder 3C, (spinach juice, beet juice), sesame 1/2C, dark brown sugar 1/2C, chestnut 100g
1. Sieve 1C of glutinous rice powder. Add 5T of hot water and knead it.
2. Adjust the amount of water while kneading. Depending on the texture of the glutinous rice flour, 1~2T of water may need to be added.
3. To prevent the dough from drying, put it in a plastic bag and let it rest for about an hour.
4. Heat the spinach juice and the beet juice and complete the coloration.
5. Add 1/2C of sesame, 1/2C of brown sugar, and 1T of honey to make the filling.
6. Use half of the nuts as they are, and cut the other half into bite-sized pieces.
7. Divide the aged dough into 6 pieces and add the filling in a half-moon shape.
8. Songpyeon is covered with vinyl or wet cotton paper to prevent it from drying out.
9. Put a cotton cloth on the steamer and sprinkle sugar to prevent sticking to the floor.
10. Put Songpyeon on top of it and steam it for 20 minutes.
11. After applying water to Songpyeon, remove it from the steamer.
12. Apply sesame oil and put it on a plate.
