AMBASSADOR PARK MEETS MELISSA LEE MP AT PARLIAMENT IN WELLINGTON

Ambassador Mr Yongkyu Park met with Ms Melissa Lee MP at Parliament in Wellington on 28 September. During the meeting, Ambassador Park and Ms Lee discussed various ways to further strengthen bilateral ties between Korea and New Zealand, including the conclusion of the Korea-New Zealand FTA. They also shared ideas on plans for the next year's ‘Korea-New Zealand Year of Friendship’ to celebrate the 50th anniversary of the diplomatic relations between the two countries.

AMBASSADOR PARK VISITS DUNEDIN AND CHRISTCHURCH

Following his arrival in New Zealand last month, Ambassador Mr Yongkyu Park made his first visit to Dunedin and Christchurch from 5 to 7 October.

During his visit to the region, Ambassador Park met with representatives of the Korean communities and also hosted lunches for the members of the New Zealand Korean War Veterans' Association in both cities.

While he was in Christchurch, the Ambassador met Christchurch City Council officials and was briefed on the progress made for the Christchurch earthquake recovery. He expressed his gratitude to the Council members for their support for the Korean community.

Ambassador Park visited Otago University in Dunedin and the University of Canterbury in Christchurch, and met with faculty members to ask for their care and supports for Korean students in each university. He also held meetings with Korean students and encouraged them.

Before leaving Christchurch, Ambassador Park visited the Antarctic Centre and met Antarctica New Zealand representatives to discuss about Antarctic related cooperation between Korea and New Zealand.

Oi-sobagi

(Stuffed Cucumber Kimchi)

Oi-sobagi is a type of Kimchi made with slightly fermented cucumbers that have been slit and stuffed with seasoned Korean leeks. Oi-sobagi may also be served without fermenting.

KOREAN RECIPE

INGREDIENT & AMOUNT

600g cucumber, 30g coarse salt saltwater : 380g water, 20g coarse salt 50g small wild leaks

15g (1 tbsp) salted shrimps

seasoning : 28g (2 tbsp) minced green onion, 16g (1 tbsp) minced garlic, 4g (1 tsp) minced ginge, 14g (2 tbsp) ground red pepper, 4g (1 tsp) salt

stuffed cucumber liquid : 45g (3 tbsp) water, 1g (¼ tsp) salt

INGREDIENT PREPARATION

1. Clean the cucumber by rubbing with salt and wash, cut them into 6cm-long (515g), put 3~4 knife slits on it, inside of 1cm on both sides.

2. Marinate cucumber in salt water for 2 hours, drain water on a strainer for 30 min.

3. Trim and wash small wild leaks, cut them into 0.5cm-long finely.

4. Mince the solid ingredients of salted shrimps.

RECIPE

1. Prepare filling stuffs with small wild leaks, salted shrimps and seasoning sauce by fumbling with hands.

2. Fill up the slits on the cucumber with seasoned filling stuffs.

3. Put the stuffed cucumber into a jar. Add water and salt in the mixing container to make stuffed cucumber Kimchi liquid, pour it into the jar and press the cucumber down.

4. Ready to serve.
